The level of experience and service I offer as a consultant are comprised of my encyclopedic knowledge and hands-on education through years of building, operating, and managing the Front and Back Of House with a comprehensive understanding of atmosphere and cuisine styles. My passion, knowledge and experiences serve everything that I do.  I guarantee improvement in all aspects of the BOH, including inventory control, payroll and quality control.  I will also improve your FOH including all service points and menu training.

FOOD PHILOSOPHY: I treat seasonal, locally sourced ingredients with utmost respect and passion, and present them on my plates with integrity and artistry.  To quote Michael Chiraello, "I like to make the ordinary, extraordinary".

I'm an extremely creative individual by nature which remains my calling card in the kitchen. I have seen it and done it, from the most humble to the most demanding haute.  With my 27+ years in the industry, I am fluent and capable of cooking within any cuisine style on the planet, with my first love being Italian-Mediterranean Cuisine.
